- 300 gr zelfrijzend bakmeel
- 100 gr Griekse yoghurt
- rasp van een halve citroen
- 5 eieren
- 200 gr aardbeien voor in de cake
- 100 gr aardbeien voor op de cake
- 4 el xylitol of andere vergelijkbare suikervervanger
- Stap 1 Verwarm de oven voor op 180 graden.
- Stap 2 Meng in een blender de Griekse yoghurt, eieren, bakmeel, xylitol en citroenrasp tot een glad beslag.
- Stap 3 Snijd de aardbeien in kleine blokjes en lepel deze voorzichtig door het beslag.
- Stap 4 Doe het beslag in een ingevette bakvorm en bak de cake 50 minuten.
- Stap 5 Snijd nu de overige aarbeien in kleine blokjes. Eventueel kun je zelf ook aardbeien jam maken voor op de cake. Decoreer met aardbeien en geniet!
