Wraps met Aubergine

Ingrediënten
- 1 aubergine
- 8 wraps (volkoren)
- 1 ui
- blikje mais
- 2 el pijnboompitten
- 2 el olijfolie
- 400 gr kip gyros (of kip klein gesneden)
- 1 el bbq kruiden
- 3 el mayonaise
- 2 tl hot curry
- sap van ½ citroen
- peper en zout
Instructies
- Stap 1 Marineer de kip met een eetlepel bbq kruiden en 2 eetlepels olijfolie. Meng het geheel goed en laat dit even staan.
- Stap 2 Snijd de aubergine & ui in kleine blokjes.
- Stap 3 Meng dit in een schaal met de pijnboompitten, de mais en voeg er wat peper en zout aan toe voor de smaak.
- Stap 4 Bak in een pan of op de bbq de kip gaar en ook het groenten mengsel. Bak de wraps om en om zodat deze lekker krokant worden en een kleurtje krijgen.
- Stap 5 De saus voor op de wraps maak je door mayonaise, citroensap en hot curry kruiden te mengen.
- Stap 6 Besmeer de wraps met de saus en doe er een schep groenten en kip in. Eventueel serveren met sla.
