De aubergine schijven het liefst een paar uur in de marinade laten liggen, maar minimaal een uur.

Door:

Ingrediënten
  • 1 grote aubergine
  • 1 el appelazijn
  • 5 el milde olijfolie
  • 1 el Provençaalse kruiden
  • peper en zout naar smaak
  • 1 groot ei
  • pakje paneermeel
  • milde olijfolie om in te bakken
Instructies
  • Stap 1 Snijd de aubergine in schijven in de lengte. Je haalt ongeveer 4 tot 6 schijven uit een grote aubergine. Minimaal een centimeter dikke plakken.
  • Stap 2 Maak de marinade van de appelazijn, olijfolie, Provençaalse kruiden, zout en peper.
  • Stap 3 Leg de schijven aubergine in een schaal met de marinade, zet afgedekt weg voor minimaal een uur.
  • Stap 4 Kluts een ei in een diep bord, strooi paneermeel in een ander diep bord.
  • Stap 5 Haal nu elke schijf aubergine door het ei en door het paneermeel, aan beide kanten.
  • Stap 6 Ga door tot alle schijven klaar zijn en goed bedekt in de paneermeel.
  • Stap 7 Verhit nu een koekenpan met een laagje milde olijfolie, zodat je de schnitzels een soort van kan frituren. Dus wees niet de zuinig met de olie.
  • Stap 8 Bak ze lekker krokant.
  • Stap 9 Heerlijk bij een salade en gebakken aardappeltjes.
