Dit is een vegetarische ovenschotel. Lekker voor bij de borrel! Of bij een soepje bijvoorbeeld.

Door:

Ingrediënten
  • 75 gr popped chips paprika (food2smile)
  • 125 gr vegetarische spekreepjes
  • 1 kleine rode ui
  • 1 bosui
  • 1 el koriander
  • 1 klein blikje kidney bonen
  • 1 klein blikje mais
  • Zakje geraspte kaas
  • 3 tomaten
  • 1 teen knoflook
  • 1 el olijfolie
  • Zout en peper
Instructies
  • Stap 1 Verwarm de oven voor op 200 graden.
  • Stap 2 Pel en snijd de rode ui in dunne halve ringen.
  • Stap 3 Bak de vegetarische spekreepjes kort op in een koekenpan met de rode ui.
  • Stap 4 Maak een ovenschaal klaar met de popped chips.
  • Stap 5 Ondertussen snijd je de bosui in ringen en de koriander fijn.
  • Stap 6 Laat de kidneybonen en mais uitlekken.
  • Stap 7 Verdeel de spekreepjes met rode ui over de popped chips en daar overheen de bonen en de mais. Top af met de geraspte kaas.
  • Stap 8 Zet de schaal tien minuten in de oven.
  • Stap 9 Ondertussen maak je de tomatensalsa.
  • Stap 10 Haal het vruchtvlees uit de tomaten en snijd ze in kleine blokjes. Even uitlekken in een zeef is handig.
  • Stap 11 Pers een teen knoflook en mix deze door de tomaten in een kommetje. Breng op smaak met zout en peper en 1 eetlepel olijfolie.
  • Stap 12 De salsa is lekker fris bij de popped chips.
  • Stap 13 Voor het serveren verdeel je nog de bosui en koriander over de popped chips.
